Discover this oasis in the historical centre of the Andalusian city of Córdoba, the perfect alternative retreat for a luxury city break in Spain.

Focussed on gastronomy and wellness, the hotel is set in a former manor house with vestiges of an impressive Roman villa from the first century A.D. under its restaurant.

The highlight is certainly the indoor Roman baths and outdoor swimming pool, the latter being set in a sanctuary of fruit trees and aromatic plants.

Inside, the décor is a stunning medley of Roman artefacts, Moorish influences and contemporary touches, creating dreamy accommodation and public areas that have a feeling of space and serenity in the middle of the city. Rooms and suites are spacious, and even at entry level have luxuries including a capsule coffee maker, rain shower and pillow menu.

Stroll straight from the foyer through the Jewish Quarter and be rewarded with sights including the Synagogue of Cordoba, unique in Andalusia and the third best preserved of medieval times in Spain.

Dining is a treat, enjoyed in two different spaces: the more formal dining of the signature restaurant with its Cordoban specialties, and the informal tapas fare and bar menu offered on the terrace. Underneath the former you can view impressive Roman villa remains, while the latter is immersed in lemon and limes trees and bougainvillea.

 

The hotel has 53 accommodations giving it a boutique feel, with interconnecting rooms available and options for single travellers. The changing menu will tempt you with the likes of salmorejo cordobés with Iberian toast and tomato powder ice cream, burrata with tomato and basil textures, oxtail ravioli, and desserts such as cheesecake with stewed fruits of the forest and yuzu ice cream.

This special spot in the centre of the hotel transforms throughout the day. Start the morning on the terrace with a freshly brewed coffee and Pastel Cordobés. Spa & Wellness

Walk through the hotel’s citrus trees to the Roman columns of the Bodyna Spa, where restorative therapies and relaxing treatments await. The underground Roman baths here are filled with warm waters for a soothing bathe, and there is an outdoor pool for an al fresco dip. Products used in the massages and treatments are from Cinq Mondes.

Gastronomy

This is one of Spain’s many centres of gastronomy, and trying the local favourites is a “must-do” when visiting Córdoba. The hotel itself offers a Michelin Dinner Tasting Menu at its main restaurant, which is an impressive journey through the region’s authentic dishes and locally-grown ingredients. The city is home to two Michelin-starred restaurants; the legendary Noor with three Michelin stars that’s just a 10 minute taxi ride from the hotel, and one-star Choco. Many other note-worthy restaurants of an exceptionally high quality are within walking distance of Hospes Palacio del Bailío.

Part of the Hospes Group, the hotel follows the mission that “enhances its environmental impacts and eliminates or mitigates the negative ones”.
Ways the group aims to be more efficient in its energy consumption include, but are not limited to: the use of LED bulbs, promoting the reuse of bed and bathroom linens and double-flush tanks. Waste generation and management initiatives include extensive recycling.
